It is known as "liquid gold", "Queen of vegetable oil" and "Mediterranean manna" in the West. The reason lies in its excellent natural health care effect, beauty effect and ideal cooking purpose. Edible high-grade olive oil is the natural fruit oil juice extracted by physical cold pressing process from freshly ripened or mature olive fruits. It is the only woody vegetable oil in the world for human consumption in the form of natural state.

The traditional process of olive oil processing is to crush the mature and cleaned olive fruit on a stone mill, then pack it in a clean bag, squeeze the oil out on an extruder, filter, precipitate and bottle it to become finished oil.

Modern oil production technology uses high-speed centrifuge ( tricanter centrifuge and disc separator) to quickly separate oil and slag, which effectively improves the oil yield and oil quality.

The 5 steps for the production of olive oil
Olive Oil production is mainly divided into 5 phases.
1.Collection
Harvesting is one of the most delicate and decisive steps to obtain an excellent quality olive oil.
Generally it is facilitated with the use of nets lying on the ground under the plants that allow to easily collect the fallen
product or facilitated by any mechanical equipment.
2.Washing and pressing
After harvesting the olives are weighed and subjected to an abundant washing in water. This process is carried out with a special washing machine with a constant flow of water that invests the olives.
The crushing system of the milled olives is the most ancient instrument, conceptually derived from the millstones used since the Hellenic age. Today, however, many mills use the most modern hammer crushers, which break the olives by pushing them violently against a metal grid.
3.Kneading
After pressing the olive paste is subjected to the kneading operation which consists of a continuous and slow mixing of the dough.
The kneading phase is an essential moment for the subsequent extraction of the oil from the olive paste. In fact, the kneading allows the olive paste to reach the optimal temperature in which the natural enzymes present are able to fully activate.
4.Extraction
The extraction phase consists in the separation of the oil from the solid fraction.
This phase can be performed for:
* Pressure;
* Centrifugation;
* Percolation.

5.Separation

In this final phase we proceed to separate the olive oil from the water thanks to the centrifugal force.

Scope of application:


Olive oil has a healthy high content of monounsaturated fats, such as oleic acid and polyphenols. This kind of vegetable oil has a long history in the western world, and it has been mentioned in many religious documents. As a cooking oil, it is good for heart health. In addition, olive oil has other uses in daily life. Of course, it is not necessary to use expensive virgin olive oil. Ordinary products are enough.


1.Virgin olive oil:It is an oil product directly prepared from olive fruit by mechanical and physical methods (including cleaning, decantation, centrifugation or filtration, but excluding high-temperature heating and leaching with organic solvents). Without refining, it is rich in various original nutrients of olive fruit, with high nutritional quality.Among them, "extra virgin olive oil" can be said to be the "first oil" squeezed from olive fruit for the first time, with the highest nutritional quality.


2.Refined olive oil:It is the oil made from the fruit residue after the first press and several times of press. It can be eaten only after refining. The processing technology of refined olive oil includes organic solvent leaching and high temperature heating, which destroys or removes the original nutrients of olive fruit.
Therefore, although the purity of refined olive oil is higher, the nutritional quality decreases. In short, virgin olive oil contains many "good impurities", such as phytosterols, squalene, chlorogenic acid, lignans, vitamins and minerals. Refined olive oil removes these "good impurities", and only fatty acids can be provided to consumers.


3.Mixed olive oil:It is a mixture of virgin olive oil and refined olive oil. Its nutritional quality is also between the two.
On the market, there are few products sold directly in the name of "refined olive oil", and refined olive oil is mostly used to produce mixed olive oil.


4.Olive pomace oil:It is extracted from pressed fruit residue with organic solvent. Its quality is obviously lower than that of real olive oil, but it can still be eaten after refining, and the price is usually much cheaper.
According to the requirements of GB 23347-2009, this olive pomace oil shall not be sold in the name of "olive oil".


5.Olive blend oil:Olive blend oil and pure olive oil are basically two different things. Olive blended oil is mostly prepared from olive fruit residue oil and other vegetable oils, such as rapeseed oil and palm oil. Its nutritional quality is far from that of olive oil, and its price is much lower.


In order to protect nutrition, when cooking olive oil, whether virgin or refined olive oil, you should avoid too high temperature. On the contrary, those olive blended oils are more suitable for cooking dishes at high temperature. Olive oil is also widely used in various cosmetics and skin care products, which can make the skin smooth and smooth and delay aging.
